Indian salmon curry with spinach and chick peas

Hello everyone,

Second recipe on this week already :). I already posted it on my instagram and I promised to post the recipe here. So, here it is!

Indian salmon curry with spinach and chick peas
Serves 4

Preparation: 10-15 min
Baking: 10-15 min

ø Big casserole pan

Ingredients

  • 150 g rice
  • 2 onions
  • 4 cm fresh ginger
  • 2 tomatoes
  • 1 tbsp oil
  • 2 tbsp mild curry paste
  • 400 g chick peas
  • 200 ml coconut milk
  • 300 g salmon filet
  • 400 g wild spinach
  • 1 lemon

Methods

  1. Cook the rice according to the instructions on the package
  2. Cut the onions into half rings
  3. Peel the ginger and cut fine
  4. Cut the tomato into squares
  5. Heat up the oil in a big pan and bake the onion, ginger and curry paste for 3 min on low heat
  6. Drain the chick peas in a colander and rinse under cold running water. Leave to drain
  7. Add the coconut milk, chick peas and tomato square to the curry and bring to a boil while continuously stiring
  8. Let it boil for 5 min on low heat
  9. Bring to taste with pepper and salt
  10. Meanwhile, cut the salmon into squares of 2 cm
  11. Cut up the lemon into 4 and cut the spinach
  12. Add the spinach and the salmon to the curry and carefully stir until the spinach and salmon are done. This will take around 3 min
  13. Serve with the rice and the lemon
