Sweet potato pizza with cheese, olive tapenade and quail eggs

Dear readers,

As I said a few weeks ago, I was planning on making a three course dinner with Easter. Well, that happened :). I was planning on making a dessert as well, but we were so full, that I skipped that.

We started dinner with an amuse, a sweet potato pizza. It’s super easy to make and done in 10 minutes. So a super recipe to make if you have visitors and you don’t want to spend to much time in the kitchen. Enjoy!

Sweet potato pizza with cheese, olive tapenade and quail eggs
Serves 8

Preparation: 5 min
Baking: 10 min

ΓΈ Oven tray

Ingredients

  • 4 quail eggs
  • 2 sweet potatoes
  • 100 g grated cheese
  • 50 g olive tapenade
  • 2 basil twigs
  • Salt en pepper
  • Olive oil

Methods

  1. Heat up the oven to 220 Β°C (430 F)
  2. Boil the quail eggs for 2 minutes and cool them in cold water. Peel them immediately
  3. Peel the sweet potatoes and cut into eight thin slices
  4. Divide the slices over the baking tray
  5. Season with pepper and salt and drizzle with olive oil
  6. Bake in the oven for 5 minutes
  7. Take out of the oven and divide the olive tapenade and the grated cheese over the slices
  8. Bake for another 5 minutes
  9. Take out of the oven and garnish with the basil and half of a quail egg
