Soup of yellow bell pepper with cucumber and smoked trout

Hello hello,

So, this was dish two of my Easter dinner: the starter. It’s a super fresh soup which is given a kick by the smoked trout. Go try it!

Soup of yellow bell pepper with cucumber and smoked trout
Serves 4

Preparation: 25 min

Ingredients

  • 3 tbsp olive oil
  • 2 cloves of garlic
  • 2 sjalots
  • 3 yellow bell peppers, in squares
  • 1 tsp paprika powder
  • 1 L vegetable stock
  • 1/2 cucumber, in mini squares
  • 1 red pepper
  • 2 smoked trout fillets
  • 4 basil leaves

Methods

  1. Heat up the oil and bake the garlic and sjalots for 2 minutes
  2. Mix the bell peper and paprika powder through and bake for another 2 minutes
  3. Pour in the vegetable stock and boil softly for 4-5 minutes
  4. Puree the soup with a blender
  5. Pour the soup in a deep dish and garnish with the cucumber, red pepper, trout and a leaf of basil
