Cheesecake :D

Hello hello,

So, this weekend was baking time! We had a small get together with my family and I of course, as the bake fool I am, volunteered to make the pie’s. I decided to make two and this is one of the recipes. It’s an old time favourite of my best friend and me and so easy to make. Here it comes!

Cheesecake
Serves 10-12

Preparation: 15 min
Baking: 45-50 min

ø 26 cm (10 inch) springform

Ingredients

Bottom

  •  200 gram (2 cups) digestive biscuits or bastogne koek (for the Dutchies)
  • 70 gram melted butter

Filling

  • 450 ml (1 3/4 cup and 2 tbsp) crème fraîche
  • 550 gram (2 1/3 cup) creame cheese
  • 220 gram (1 cup & 2 tbsp) sugar
  • 2 eggs
  • 1 sachet vanilla sugar or 1 tsp vanilla extract

Method

  1. Preheat the oven at 180 °C (355 F)
  2. Line the bottom of the baking tray with baking paper
  3. Smash up the biscuits in a plastic bag
  4. Melt the butter, pull the pan of the fire, and add the biscuits
  5. Stir until mixed and line the bottom of the baking tray with the smashed biscuits.
  6. Flatten with the back of a table spoon
  7. For the filling, stir all the ingredients together
  8. Pour the mixture over the bottom and bake for 45-50 min in the oven until the top is golden brown
  9. Let the cheesecake cool down and cool in the fridge (it tastes best if you let it cool for a night, so this is a good pie to make the day before)
